Sticky Lime-Ginger Fish Fillets (Slow-Cooked in Marinade)
Sweet honey, zesty lime, savory soy, and a punch of ginger & garlic come together in this ridiculously easy pan-to-table dish. The fish marinates for 2 hours, then gets seared and slowly simmered in its own flavorful juices until impossibly tender.
Ingredients
For the Marinade:
- ¼ cup (60 ml) fresh lime juice (about 2 limes)
- 2 tbsp honey (runny kind works best)
- 1 tbsp Worcestershire sauce
- 2 tbsp soy sauce
- 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
- 3 cloves garlic, minced (or 1 tsp garlic powder)
- ½ tsp white pepper (or more to taste)
- 1 tsp dried oregano (or 1 tbsp fresh, chopped)
- ¼ cup (60 ml) olive oil (for the marinade)
- ½ tsp salt (remember soy sauce is salty – add to taste)
For Cooking:
- 4 white fish fillets (cod, halibut, snapper, or tilapia – about 6 oz / 170 g each)
- 2–3 tbsp olive oil (for frying in the pan)
For Garnish (optional):
- Fresh lime wedges
- Chopped fresh dill or parsley
Method
- Make the marinade. In a medium-sized bowl, whisk together the lime juice, honey, Worcestershire sauce, soy sauce, grated ginger, minced garlic, white pepper, oregano, ¼ cup olive oil, and salt until completely smooth and emulsified.
- Add the fish fillet pieces. Place your fish fillets into the bowl, turning them over a few times to ensure every surface is generously coated in the marinade.
- Leave to marinate. Cover the bowl with plastic wrap or a lid, pop it in the fridge, and let it sit for about 2 hours. (This gives the lime and ginger time to brighten the fish without making it mushy.)
- Remove fish and save the marinade. Take the fillets out of the bowl, but do not discard the leftover liquid – set that bowl of marinade aside because it becomes your sauce later.
- Fry the fillets. Heat 2–3 tablespoons of olive oil in a large non-stick or heavy-bottomed skillet over medium-high heat. Once the oil is hot, lay the fillets in the pan (work in batches if they don’t fit in a single layer). Fry for 2–3 minutes on each side, just until they get a nice golden-brown sear.
- Add the reserved marinade. Pour all the leftover marinade from the bowl right into the pan around the fish. It will bubble and steam – that’s good!
- Put the lid on and cook on a slow heat. Turn the heat down to the absolute lowest setting, cover the pan with a tight-fitting lid, and let it gently cook for 8–12 minutes (depending on the thickness of your fillets). The fish is ready when it flakes easily with a fork, turns opaque, and feels wonderfully tender.
- Serve hot. Plate the fillets, spoon that gorgeous sticky sauce over the top, and squeeze over a little extra fresh lime if you like. Enjoy!
